Breakfast of Buckeyes

It’s game day!  In Columbus, Ohio that means the world is stopping from noon until the last touchdown is scored by our Ohio State Buckeyes.  It is the first game of the season and it is beautiful outside.  We are heading to campus to watch the game with thousands of other excited fans.  In preparation for what lies ahead, I decided we needed a filling and healthy breakfast.

We decided French toast sounded good and so I got to work making it my own way.

Fit French Toast

This made 8 pieces of toast, John and Ash were here with us!

  • 6 egg whites
  • 1 tsp. cinnamon
  • 1 T vanilla
  • 1 scoop vanilla protein powder
  • 1 tsp. Splenda

Mix all of the wet ingredients together and dip TJ’s Sprouted Wheat bread in the mix.  Cook in a fry pan, coated with Pam.

Once the toast was done, I went to the fridge to get the syrup and realized we were out!  Bummer.  So I raided the fridge and took out anything that would make a good topping:  peanut butter, almond butter, spray butter, ff coolwhip, jam, banana, strawberries, and blueberries.

The toppings ended up being really good, but after you have one thing in your mind, it’s hard to get over it.  Luckily, we managed!

We are off to go to the game!  I am hoping for Subway for lunch, we will see!

Friday Food!

Sorry for the missing post yesterday, I was busy until my head hit the pillow!  I started the day with a big bowl  of fiber cereal with tons of fruit.

For lunch I made a veggie sandwich with hummus on sprouted wheat bread.  I missed the pic because I was inhaling it before running outside for recess duty.  I forgot to take my usual 3pm snack to school and I came home really hungry.  I had a PB Larabar to hold me over until our dinner guests arrived!  I also hit the elliptical for quick 30 min. exercise fix.  It wasn’t a great workout, but it wasn’t bad and it made me feel better.

John and Ashley arrived for dinner around 7:30!  We were hoping to enjoy dinner and drinks on the deck, but the hot, sticky weather kept us in with the air (it was a good decision because it ended up storming all night).  We had simple appetizers of hummus/veggies and chips/salsa.  Brady took a few pics, but they aren’t very appetizing and we all know what those things look like, so I will leave them off! 🙂

Dinner was grilled chicken marinated in Trader Joe’s Black Pepper sauce.  The sauce was ok, not one of my favorites.

We served the chicken with the tomato-mozzarella wheat bulgar salad I made last weekend.  Brady was not here to try it last weekend, and Ash is a frequent blogland reader and wanted to try the bulgar too.  I have to say, I really enjoy this simple dish!  It’s chewy and natural tasting but has great flavor!

We also had tons of grilled veggies!

For dessert, Ash brought a frozen yogurt I had not tried: Edy’s Berry Granola Fro Yo.  It was wonderful!  We added tons of fruit to our bowls, plus AB and sugar-free choc. syrup!  I ate it so fast, there was not time for a picture, whoops!!

Found: PB Cookie Larabars

I found PB Larabars at my Trader Joes!  Everyone should go check their TJ’s or call ahead.  They also had cherry pie, cashew cookie and apple pie.

Where did the day go?

Today flew by!  It seems like my bowl of fruit and cereal was days ago, not hours.  I packed a good amount of food to keep me going threw school, then to the gym, then to Trader Joes for restocking.

Lunch was leftovers salad:

Not really a great angle on the picture but it included:

  • romaine and spinach
  • 1 small piece of grilled chicken
  • TJs hummus and homemade hummus
  • lentils
  • peppers
  • light feta
  • tomatoes

It was really filling, but I still managed to eat a bag of 94%FF kettle corn after.

Around 3pm, while my kids were at P.E. class I snacked on this:

This kept me full through my hour of cardio, afterschool from 5-6pm.  I stopped at TJs after the gym and didn’t get home to eat dinner until 7ish.  I was surprisingly not starved like usual.

Brady had a soccer game at 6:30pm, and I didn’t want to wait for him to get home at 8ish to eat so I went ahead and made myself dinner.  I wanted a veggie-hummus sandwich with sprouted bread, but I also wanted some zucchini.  Decisions, decisions!

I went ahead and breaded some zuc with bread crumbs and parm and “fried” them in Pam on the stove.  While they were getting brown and crispy, I decided to throw in some fresh mozzarella and basil.  I also added 2 roma tomatoes.  This turned out to be great!   Because I still wanted the veggie-wich, I settle for an open faced hummus veggie along with my zucchini mix.

For dessert, I mashed up a banana ( I don’t want another cramp in my calf, I also drank about 100 ounces fo water today, so I hope that helps!) peaches and strawberries and swirled them with almond butter!  So yummy!

Tomorrow we are having company for an end of the summer dinner!  Any new ideas to try?!

What lies beneath…

The fruit that is!  Under a huge bowl of fruit there is some crunchy, fiberific cereal.  I started my bowl this morning with 1c. of TJ Fiber Twigs and then added 1/2 Kashi Go Lean.  I woke up in the night with a HUGE charlie-horse in my calf (maybe from the new workout class) but I think I am dehydrated.  It’s hard to drink so much water all day when you can’t leave your class, so I cut way back on water.  I need to figure out a new way of getting it in after school.  Anyways, I knew I also needed some potassium to make sure the cramp would not come back so I added a banana to my cereal and then some peaches and then strawberries and of course blueberries!

The ‘Nana Topped Treat

These healthy treats are super easy to make, according to Sarah!  You can vary the recipe according to your favorite flavors or mood!

  • carmel or any kind of mini rice cake
  • peanut butter or almond butter
  • slices of fresh banana  or any fruit would work (strawberries, peaches)

Build the treats and enjoy!

Book Club!!

Tonight we had our first book club meeting at my house!  It was a great success!  While we were not overly impressed by the book, Good in Bed, because it was not realistic and very depressing, we did enjoy each other and the delicious snacks!  Everyone brought an appetizer or dessert to share, and we had SO much food!
