Today went fast, but my kids with Halloween just around the corner.  I did a pumpkin project with them today, which they loved.  We wrote about pumpkins, read about pumpkins, talked about pumpkins and carved a pumpkin (not a jack-o-lantern :))  Some of them had never touched the inside of a pumpkin, so they loved cleaning out the guts! They brainstormed many names but voted to name our pumpkin “Homeboy”.  I thought it was an interesting choice.  🙂

Unfortunately Brady could not join us for the fun.  Isn’t Homeboy cute?

So after an energetic day of school, I was craving something warm and filling.  I didn’t really have a plan, and we are missing some critical ingredients for our favorite dishes so I had to get creative.  I ended up cooking 1/2 an acorn squash and some kashi pilaf to start.  I knew these would be good choices regardless of what else I thought up.  I then opened a can of lentils and chickpeas.  In the meantime, I made some fresh pesto with my entire basil plant.  I decided to strip all of the leaves off before it froze and they were no good to use. I then mixed everything together to make one great, fibery, fall dish.

Fall Fiber (use as much as you would like of each)

  • chickpeas
  • lentils (canned or cooked)
  • Kashi pilaf
  • fresh oil-free pesto
  • acorn squash (cooked)
  • salt and pepper

Mix all cooked ingredients together and dig in.

This is a very veggie dish, and it did not appeal to Brady at all.  He ended up making his own pizza with some frozen dough, cheese, chicken and fresh pesto.  The pizza was great too!

It’s been freezing here so I love to get my workout done in the morning, when I am too asleep to think about how cold it is.  Im off to work on grad school papers…yuck

Yay for being one day close to the weekend (that means Florida for us!!)

I have not posted all three of my meals in a while because I just have not had time or they have been repeats and leftovers. But today, I have had three original meals all worthy of being posted.

I started my morning with an early workout and then I came home to get ready for school, and EAT! My breakfast was oatmeal with cran-apple relish, banana and H20. It was a pretty pink.

And my easy packable lunch consisted of many things I prepared on Sunday. BBQ stir fry tofu, caramelized onions and cut up veggies and a Flat Out wrap. I also mixed some 0% Greek Yogurt with cran-apple relish.

I eat lunch at 11am so by 2, I am starving!  I had an apple that was great at the time, but I was starving again later.
After school I tutored and then came around 5:30ish to make dinner (eat leftover kettle corn) and get ready to carve pumpkins!

I made a new scallop recipe for dinner! It was great!  With spaghetti squash for me and Barilla Pasta Plus for B.  I will call this Scallops Supreme, hehe.

Scallops Supreme

  • scallops for 2
  • 3 pieces bacon (for B)
  • handful of arugula
  • 3/4 can of white beans
  • few fresh basil leaves
  • 2 whole tomatoes cut up
  • 1/2 c. white wine
  • salt and pepper
  • pasta/spaghetti squash

First, begin cooking the scallops in a pan with PAM and salt and pepper.  When they are a little cooked and in need of some liquid – add the wine.  Let them simmer.  Meanwhile, make sure the spaghetti is cooking.

Then, when the scallops are mostly cooked, add arugula, tomatoes, basil, beans, salt and pepper, and cooked bacon to the pan.  Simmer until mixed/melted together, add more wine if necessary.

Add the mixture of scallops to spaghetti (either kind) and mix in the pan so everything can heat together.


Off to bed to get up for an early workout, NOT by myself!  Brady agreed to go in the morning, even though he has a soccer game tomorrow night.  I think he may have forgotten!  🙂

It all started with some simple cranberry-apple relish. Chopped cranberries (in my little food processor) + chopped apple + a little honey + 15 min on the stove = delicious cran-apple relish! I made this to add to oatmeal and yogurt this week. I was going to submit it to Gina at Fitnessista the BSI contest, but it was too simple, I thought.

So we went to get apples, and ran errands today.  When we got home, with tons of fresh farm vegetables, I decided to make sweet potatoes and soup for dinner.  While cooking, I spotted the relish, still on the stove, and my food processor still on the counter (we didn’t clean up before we left :)) That is when recipe was created!

Cran-Apple Mashed Sweet Potatoes

  • 3 tbsp. simple cran-apple relish (recipe above)
  • 2 cooked sweet potatoes with skin
  • dash of salt and pepper
  • 1/4 c. 0% T.J. Greek Yogurt

That is it!  Delicious and pretty pink!

Oktoberfest…the beer

So at our party each year, we have everyone bring a different type of beer.  We then take the beer and assign each type a letter.  We pour the beer into dixie cups for everyone to taste and rate on a scale of 1 -5.  1 being you want to gag/puke and 5 being you would order a pint or 2 or 3.  This year we had no duplicates!!  It was great.  Here is a pic of each entry.

Everyone rated the beer and Brady put the scores on his excel spreadsheet to find the highest rated beer.  The the 2008 Oktoberfest Best Tasting Beer was…

Blue Moon’s Full Moon Winter Ale.

I think it won because it had a different, but still mild flavor. No one hated it.  🙂

Overall….a good choice!

Our beer!!  I picked it because beer with Honey and Raspberry has to be good!

It wasn’t over flavored which made it a hit.


This beer had the cutest looking box, I can see why it was bought! 🙂 It actually tasted like dish cleaner.  I am not kidding it tasted like you squirted soap in a cup.  Haha!  Don’t buy it!
