Italian Salad

This morning my mom and I woke up and had coffee before heading out on a run/walk. We went for about 4 miles before coming home to make smoothies. I was so excited for the smoothie, I forgot to take a picture!

Then we went and got pedicures! I love getting a pedicure! My feet get so gross and tough from running all of the time that it feels great to have them taken care of.

  • spring mix
  • eggplant
  • zucchini
  • onions
  • parmesan cheese
  • hummus
  • tomato sauce
  • sprouted bread – that I tore up to make croutons

It was amazing!! Filling and flavorful.

After my mom left I ran to the grocery store to get some things for the weekend and came home to clean up the house and do laundry!

It has been a cloudy summer day so I didn’t feel bad not being outside the whole day!
