Hallie, one of my best friends in the world, came for the night this weekend and brought me the most delicious pumpkin bread in the world. Even after from traveling from Cleveland, this was the most moist and tasty bread! Thanks so much Hallie!
And how funny is this: I was telling Hallie about Allison from GDW because they went to high school together, different years. I was talking about how I know so much about her and her life and how we are blog buddies and Hallie said she would watch for her in Cleveland because they go to a lot of the same places. The following night, Saturday, they ran into each other!! I was so jealous I wasn’t there to hang out but glad they had a good time! Small world… 🙂
Here is Hallie’s recipe:
3 1/3 C flour (She used 2 cups of wheat flour) 2 C brown sugar 1 C white sugar 2 t. baking soda2 t. cinnamon 2 t. nutmeg 2/3 C water 1 t. pure vanilla extract 1 C applesauce 4 egg whites 2 C pumpkin
1. Sift the dry ingredients into a mixing bowl. 2. Add water, applesauce and eggs and mix well. 3. Stir in pumpkin and mix again. 4. Pour into baking tins. 5. Bake 1 hour at 350 degrees. 6. Let cool and enjoy yummy guilt free pumpkin bread 🙂

Where did the weekend go?! From moving our friends into their new house, to our marathon training run, to church, errands and Brady’s soccer game – the weekend flew!

We had our neighbors over for dinner and I wanted to make a quick, easy and healthy appetizer so this is what came together.

So fresh and So easy!

  • fresh French or multigrain bread
  • light ricotta cheese – low fat
  • 1 tbs. balsamic dressing
  • salt and pepper
  • basil leaves
  • fresh tomato, sliced
  1. Cut bread into thin slices
  2. Top with ricotta, balsamic, salt and pepper mix
  3. Then top with a basil leaf
  4. Finally a tomato slice!

Loaf of Heaven

Today was another busy day!  We had a staff meeting after school and then we went to see He’s Just Not That Into You with two of my girlfriends!  I highly recommend it!  I want to see it again.

For dinner I had popcorn (94%ff kettle corn which I ate on the way)  and then when I got home, I had a almond butter and pear sandwich.  It hit the spot.  Last night, I did make time for some baking.

Banana Pear Oat Bread

  • 1 c. oatmeal
  • 1/2 c. oat (ground in the food processor)
  • 1/2 c. whole wheat flour
  • 3 smashed bananas
  • 1/2 c. mini chocolate chips
  • 1 egg white
  • 3/4 c. pear cut into cubes

Bake at 350 for 25 minutes

Cranberry Almond Bread

  • 1/2 stick of butter
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1/2 c. cranberry juice
  • 2 eggs
  • 1 tbsp. pure almond
  • 1 c. cranberries – chopped or whole
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 1/2 c. flour
  • almonds to top
  1. Mix wet ingredients together (butter, eggs, almond, juice, sugars and cranberries)
  2. When blended to a creamy mix, add dry ingredients
  3. Place in a mini bread pan and top with sliced almonds
  4. Bake at 350 for 30 min.
  5. Share with friends and family!!

Bread Baking Bonanza!

For Christmas this year I debated many gifts to give.  If I had all the time in the world, I would have made hot cocoa, marshmallows, truffles, bark, cookies, bars, jams, and granola (that is all I could think of at this second!) for all of my friends and family.  I LOVE to make food gifts and wrap them to give.  I have seen some amazing gifts in blog world!  I will post link of all of my favorites!

This year, I decided to make bread for gifts for neighbors and teachers.  I just made up the kinds as I went along and came up with the following types:

  • Banana Pecan Chocolate Chip
  • Wassail Sweet Bread
  • Cranberry Almond Bread
  • Carrot Cake Bread

I didn’t know what I was planning on making for the BSI contest of the week, so I thought about not doing it…I know, I know, I have been slacking.

So today when I was thinking what I was in the mood for for dinner, I was thinking bread!  What a perfect combo: sweet potatoes and bread!

Whole Wheat Sweet Potato Bread

  • 2 c. whole wheat flour
  • 1 c. vanilla soy milk
  • 1/4 c. wheat bran
  • 1 packet of yeast mixed with 1/2 c. water
  • 2 tbs. honey
  • 1 c. cooked sweet potato (baked and scooped out of the skin)

Cook the sweet potato until done and remove the insides into a bowl.  Add the honey, wheat bran, flour, and soy milk.  Mix yeast with 1/2 c. water and let sit for 5 min.  Then, add everything together and bake for 30 min. at 350.  Enjoy warm with a little brown sugar butter.
