Emily and I tested a few recipes from Hungry Girl’s 200 Under 200 Cookbook. While I feel that many of the recipes have too many processed foods and ingredients, there are many that seem great!

Recipe # 1: Faux Fried Mozz Sticks

Emily went through the cookbook and picked out the recipes we tried yesterday. She is a big mozzarella stick fan!

I am not going post the exact recipe but I will list the ingredients:

  • low fat string cheese
  • Fiber One cereal
  • salt/pepper/ seasonings
  • egg whites

  • onion
  • Fiber One cereal
  • salt/pepper/seasonings
  • egg whites

We did not let the onion cook long enough because we got too excited to eat it!

We approve of both of these recipes though!!

Last night our good friends John and Ashley came over for dinner! It was pouring rain and gross outside so we decided against the cookout and opted for make your own pizzas! John and Ash brought a delicious bottle of Riesling, that tasted like summer!

While we sipped, we made two great pizzas – a his and a hers. Then we started on the sides while the pizzas were cooking!

John and Ash brought dessert too – angel food cake with fresh berries and whipped cream!

It was a great, relaxing night of catching up with two of our favorite friends!!

This weekend was full of painting and paninis! Yesterday, we woke up and got started on the painting we had planned to do.

  1. The first job was the hallway going up our stairs and into the upstairs that we had patched and just needed to repaint the whole thing – same color as before.
  2. The second job was our guest bedroom. It was two colored blue and cream room – not horrible, but not my style. This took a lot work and a lot of KILZ! That blue was deep!!

When we needed a break yesterday, paninis were the first thing we thought of!

Hers:

YUM! They gave us just the energy we needed to finish the jobs (and run 6 miles!).

Then it was off to dinner with good friends and the best food! My dinner was a hummus sandwich with tons of veggies!

This morning, we woke up and spotted the panini maker sitting on the counter from last.  We immediately wanted another panini, so that’s what we made for breakfast!

Hers:

Yesterday we did a lot of cleaning around my parents house.  I got rid of things from middle school and we took care of our Christmas stuff that was lying around. We cleaned up to get ready for the cleaning lady, and then she canceled – bummer!!

After a 5 mile run with Brady, I had a bowl of oatmeal.  It was warm and filling with a huge scoop of almond butter!

Around 5 pm, my mom and I went to the club to take a step aerobics class that I used to do all the time in high school.  It was a great workout and between running 10 miles and step class, my legs are feeling it!  I am so glad to get back into it!  While we worked out, Brady, my dad, Kevin and my cousin’s husband Tom played paddle.

When they got home, we had a huge dinner of make your own pizza.  Our toppings included:

  • artichokes
  • spinach
  • olives
  • chicken
  • shrimp
  • mozzarella
  • feta
  • pepperoni
  • pesto sauce
  • tomato sauce
  • tomatoes
  • mushrooms
  • onions

This dinner was so delicious!  I would not recommend it with lots of company because the presentation of the pizza is a little messy when it is all cut!

So, Thursday we had a girls night at my house!  A few girls from my college sorority, who now live in Columbus,  came over for drinks and  holiday treats!  We had a great time!!

  • 1 round of brie
  • 1/2 c. raspberry jam
  • 1/3 c. pecans
  • 1 pillsbury cresent roll reduced fat

Roll out the cresent rolls and set brie on top.  Cover brie with nuts and jam.  Bake at 350 until roll is golden brown and brie is melty.

We had spinach artichoke dip as well as chips and salsa!

We also made these cookies look great!
