It’s amazing how you can take a 5 day break and feel like you never left when you get back to school! My kids were pretty good, they were just tired from lack of sleep and too much tv and junk food over break! I am not so sure they were reading each day like I asked them 🙂

After school, I came home and changed my clothes to go on a run/walk with Katie. We did 3 miles in the freezing cold! We both figured it was better than nothing. Then I stopped at the store to grab a few things for the rest of the week.

I came home to make an easy and quick dinner of Indian food while Brady was at Verizon getting his new phone – the Droid. It is pretty sweet! I am excited to play with it.

When he got home, around 7:45, I was lucky to have not eaten my arm off. We sat down to a his and her meal.

Hers:

I had lentils with spinach spicy sauce and some Tandoori sauce mixed in, plus extra spinach. All of this served with brown rice and broccoli.

I could only eat about half of the lentil spinach mixture. I think my eyes were much bigger than my stomach tonight.

His:

Brady had the same thing minus the extra spinach and with chicken instead of lentils.

We both made cups of hot chocolate to take to bed so we could relax. I am reading and Brady is playing with his new phone. See you tomorrow!

Back on Track

It’s Sunday night – Yuck! I am not ready for the real world to be back tomorrow. I had such a great time that I just want to keep going. Oh well. I will have to tough it out the 2 1/2 weeks until Christmas break.

Yesterday we had a fun day hanging out at my parents and having dinner at Cindy and Tom’s. The meal was great but I forgot my camera. Then this morning we woke and went for a run then a long walk. It was the perfect start to the sunny day. We filled up on a big brunch of English muffins and veggie omlettes before heading back to Columbus. We went to Brady’s parents to decorate their tree on the way home. Then we ran in our house so Brady could change for his soccer game, and we were off to the field. I hadn’t been to watch in a while, since they usually play late games, so I was a supportive wife and went to the game. I actually really enjoy going – especially watching indoor because it is so fast paced!

We came home from the game after a quick stop at Trader Joe’s for some simple dinner ingredients. I threw together a perfect meal in literally 5 minutes.

Here is what our dinner’s and tomorrow’s lunches consist of:

Brady’s dinner. This consisted of two freezer packages from TJ’s.

By mixing those two together in a pan for about 10 minutes and adding 1 egg to make it a little more fresh, he got this:

I could not figure out what I was in the mood for – I was strangely not hungry all day. I had eggs and toast around 11 and then never got hungry. I think the baby is taking over my stomach. I did decide on green beans (frozen, not canned – and not mixed with mushroom soup either) with quinoa. A weird combo I know. It hit the spot though!

After a morning spinning class (I stay 45 min out of the hour because I need to leave by 6:45) and a normalish day at school, I was ready to get home where my mom was waiting for me! She came in town to hang out for the night, since my dad is in Brazil and go to my appt. tomorrow.

We ran to Hobby Lobby to look for a few things and came home with a couple things for the house and some cute wrapping paper. When we arrived home, Brady had started making dinner. On the menu was Buffalo Chicken/Tofu salads.

They were pretty simple but filling and delicious. Here is the proof:

  • iceberg and spring mix greens
  • tomato
  • corn
  • black beans
  • buffalo marinated tofu
  • reduced fat feta
  • peppers
  • avocado
  • Flat Out broiled with some Laughing Cow Light smeared on

Yay for tomorrow being the weekend! We had our beer tasting party scheduled for last weekend but since we were out of town for the weekend, we rescheduled for this weekend. A lot of people couldn’t make it because of the last minute change, but it should be a good time for those who come!

Tip of the Day: Marinate your meat when you go to work or school so when you come home it is ready to cook and already full of flavor!

? of the Day: What are your weekend plans? I wish I was going to San Fran with all of the wonderful girls this weekend but I didn’t think it would work when it came available this summer – Bummer! We are having our beer tasting party though, which should be great!

I am finally getting over the pain that I feel when I walk down the stairs. Nothing else was really that sore, but for some reason my quads were super sore when I walked down the stairs all day yesterday. I guess not running for a week and then running 13 miles will do that do you. I am planning on posting the race recap very soon! Sorry for the wait.

Today was such a nice day in Columbus – it got up to 70 degrees! I was lucky enough to have recess duty today (I never say that!)so I got to enjoy the weather a little bit during the day. After school I had a meeting that went until 5pm then I came home and took a walk (2-3 miles). I was going to run, but I kept chatting on the phone so I just enjoyed the brisk stroll that helped to stretch out my legs. When Brady got home, I talked him into a bike ride before dinner!

It was a nice day for easy, low impact fitness activities. I am hoping to be back to working out more normally tomorrow!

I have been in a dinner rut this week – we had leftovers last night so I didn’t find them worthy of a post- so I decided to try a new sauce I bought at Trader Joe’s this summer. It reminded me a of a recipe I wanted to try from Eating Well magazine.

The nutrition stats were really good! Sometimes I am discouraged with the high fat and calories in some Indian dishes but this was not the case.

The ingredients were all simple and readable. Love that!

So in order to fit both of our needs, I made two simple dishes with this sauce.

Chicken Curry Simmer – Brady

  • 100% all natural chicken (antibiotic/hormone free)
  • 1/3 of a jar of Curry Simmer Sauce from Trader Joe’s
  1. Trim chicken then cut chicken into small cubes
  2. Cook in curry powder and water until chicken is cooked.
  3. Add sauce and simmer together

Lentil Curry Simmer – Ali

  • 1 c. lentils – cooked
  • 2/3 c. organic chickpeas
  • 1/3 of a jar of Curry Simmer Sauce from Trader Joe’s
  1. Mix cooked lentils and chickpeas in a saucepan and simmer!

As you can see, we enjoyed this easy dish with steamed veggies and bulger.

I am hoping to make some yummy recipes from Eat, Drink, and Be Vegan this week!

We have homecoming for Wittenberg this weekend! We are super excited to see our college friends so I need to make them some treats!

There are lots of occasions that give me a chance to make dinner for other people. From hosting people at our house, to taking dinner when a loved one is lost or a new baby is born, I love cooking for other people. I usually find it easiest to cook when people are coming to my house, but this meal challenges my original thought.

I took dinner to the cutest family, who live down the street and just had a baby girl! I wanted to make something they could reheat and that would travel easily, so this meal fit perfectly!

Chicken Feta Artichoke Orzo – a variation of the shrimp-artichoke- orzo

  • 1 can of diced tomatoes
  • 1 can of artichoke hearts – quartered
  • 1 lb. orzo
  • 2 grilled chicken breasts
  • 1 container of reduced fat feta cheese
  • garlic, salt and pepper, italian seasonings, basil, etc.
  1. Put the can of tomatoes and artichokes (with all of their juice) into a pan to simmer.
  2. Add seasonings if your prefer.
  3. Boil water and cook orzo as directed.
  4. While things are cooking, chop up the grilled chicken into small pieces
  5. When orzo is done, drain but don’t rinse, and add tomato/artichoke mixture, plus chicken and 3/4 container of feta.
  6. Stir until mixed. Top with remaining feta!

*This can easily be reheated!

Bread to go: Fresh French bread, sliced and buttered with herb butter (italian seasonings, garlic, s+p, stirred into room temp. butter)

Wrapped in foil for easy reheating!

Yesterday was beautiful in Columbus! Cool and breezy but totally sunny. Katie and I ran 6ish miles after school and Brady hit golf balls after work. When we were done with our daily physical activity we were ready for some fresh, quick dinner!

This quick and easy meal was thrown together in a few minutes and covered all of the food groups.

It included:

  • brown rice
  • broiled asparagus
  • baked tofu – chicken for Brady
  • cucumber/tomato salad

Yesterday I had a baby shower for my neighbor Tracie who is expecting in June. She is having a baby boy, Jasper William! Our neighborhood is really close and often throws parties and showers for one another, so it is my kind of place! A few of my neighbors brought food so it wasn’t too much cooking!
