I adapted this recipe from 101 Cookbooks and it turned out great!!

Ingredients:

  • 1 block extra firm tofu
  • 6 small cucumbers, or 3 big cucumbers
  • 1 tsp. olive oil
  • 2 tbsp. lemon juice
  • salt and pepper
  • garlic salt
  • feta cheese

Here is the step by step:

1. Cut your block of tofu into small cubes.

2. Spray a pan with foil and sprinkle tofu with salt, pepper, and garlic salt.

3. Bake at 400 for about 30 minutes or until browned.

I had a few requests for this recipe and since it is so easy and tasty I wanted to post it!!

I have to give credit to Brady’s dad for these. He always makes them for family parties and I love them! 🙂

Cucumber Sandwiches

  • 1 or 2 (depending how many you need) cucumbers peeled and sliced
  • 1 package of reduced fat cream cheese
  • 1 packet of dry Hidden Valley Ranch salad dressing mix
  • 1 pack whole grain or whole wheat pitas or flatbread

Mix the ranch and the cream cheese and let sit in the fridge if you have time. The flavor gets better after it sits together for a while. Then, just before serving, spread cream cheese mixture on small pita triangles and top with a cucumber slice.

See my little star sandwiches (on the top left corner)- I wanted to do them all like that but they wasted too much pita. Next time I will plan ahead and get two packs of pitas so I can make shapes!

Cucumber/Tomato Salad

  • 1 cucumber cut into small pieces
  • 2 tomatoes cut into small pieces
  • 1/3 c. crumbled reduced fat feta cheese
  • sprinkle of balsamic dressing – I use Good Seasons Italian but reduce the oil and use balsamic instead of apple cider vinegar

Yesterday was beautiful in Columbus! Cool and breezy but totally sunny. Katie and I ran 6ish miles after school and Brady hit golf balls after work. When we were done with our daily physical activity we were ready for some fresh, quick dinner!

This quick and easy meal was thrown together in a few minutes and covered all of the food groups.

It included:

  • brown rice
  • broiled asparagus
  • baked tofu – chicken for Brady
  • cucumber/tomato salad

After a busy, fun weekend, and before a draining paper, we had a cookout! John and Ash, came over for some classic cookout food! We had the regulars: corn on the cob, salad, burgers and the fixins. We also had a new experiment – veggie burgers!

Veggie Burgers:

  • 1 c. brown rice
  • 1 green pepper
  • 1/2 c. egg whites
  • 1/2 c. bread crumbs
  • 1/2 can of chickpeas
  • salt and pepper

Process together until blended. Cook in a pan with non-stick spray.

**Next time, I would add other veggies – mushrooms, zucchini, squash, broccoli or onions.

They were really good but would be better with more veggies!

Yesterday I had a baby shower for my neighbor Tracie who is expecting in June. She is having a baby boy, Jasper William! Our neighborhood is really close and often throws parties and showers for one another, so it is my kind of place! A few of my neighbors brought food so it wasn’t too much cooking!

The centerpiece and my duck cake in the background:
