These adorable cupcakes are super simple to make!

  1. Bake cupcakes as directed.
  2. Let the cupcake cool and frost them in the colors of your choice.
  3. Stick gum drops with sucker sticks and tie a bow on the top!
  4. With a sharp knife, cut a little slit in the cupcake wrapper and insert the sucker stick!

Tonight’s book club was not so much about our past book, The American Wife, and more about celebrating Jody’s baby (who will be here in May!!). We had of the party essentials, including favors, cupcakes and a healthy dinner.

The table.

Cookies made by Jen and I!!

Trying to tie the book club into the shower.

Happy Easter! 🙂 hehe

Lots of sweets for Baby Addison

Back to the healthy part of this…

My black bean/kidney bean dip with fresh veggies!

Sarah’s warm wheat flatbread with parm and feta – AMAZING!

Kate’s Strawberry Salad

Natalie’s Apple Almond Butter with whole wheat tortillas – Great Idea!

And somehow I missed the grilled chicken we made. Brady did a great job with the grilling and the simple/sweet marinate was perfect on it.

Balsamic Marinade

  • balsamic vinegar
  • honey
  • salt
  • pepper

I have a LOT of baby showers coming up so if anyone has any good ideas for hosting, let me know!!

Last night for Brady’s birthday we had people over! A few people came for dinner but most just came to celebrate after dinner! We had a great time playing WII and Partini while managing to consume a LOT of beer and wine!

Napkin of the night:

B-Day cupcakes:

I wanted to make something easy and fun for dinner since people were coming over right after. Paninis seemed like the perfect thing because Brady loves sandwiches!

We had an assortment of choices:

  • grilled chicken we cut into strips
  • bacon
  • smoked turkey
  • Colby-jack cheese
  • spinach
  • tomatoes
  • pickles
  • avocado
  • apple
  • black bean spread (just pureed black beans with red pepper flakes)
  • roasted red pepper spread ( pureed roasted red peppers)
  • mustard
  • mayo

Plus a salad:

And some DELICIOUS roasted veggies (zuc, squash, and potatoes) that Brady made and I somehow missed. 😦

Such a fun night!!

A trip down memory lane…

Today we went to Wittenberg, our alma mater, to see Brady’s sister Janelle. She is a freshman at Witt and just rushed my sorority. Last night was bid night (the last night if rush and the celebration night!). Since we have been craving our favorite college sub shop a lot lately, we thought it would be the perfect time to go take Janelle for lunch (aka get subs for us) and hear about her night!
Obviously I couldn’t go empty handed to visit my now Sister-Sister ☺. I made her some treats to celebrate and then some straight up chocolate treats! I did in fact make the cupcakes low-fat.
The cookies are classic sugar cookies. My friend Jen and I have a cookie business where we make decorate sugar cookies and other favor like treats (choc. covered pretzels) for weddings, showers and birthday parties!

Here are a few highlights!

Almost Thanksgiving!

Today went pretty fast for being a Monday and a Thursday at school. It is soooo nice that tomorrow is the last day of the week! Thank goodness! I am ready for a break.

I worked out this morning so I wouldn’t have to bother with it this afternoon, which is always a good idea in my opinion. When I got home, I made a quick batch of pumpkin cupcakes. They are soo good! I had to try one!

Pumpkin Cupcakes

  • 1 box yellow cake mix
  • 1 cup pumpkin
  • 3 egg whites
  • splash of water
  • 1 tsp. + a little extra pumpkin pie spice

Mix all together and bake for 30 min. at 350. I also added pepitas before baking them! I am excited to bring them to school for a Thanksgiving treat!

Then for dinner (we have NO food, not even butter or any type or meat at all, we are even out of corn and black beans which I felt like we had a life supply of. A trip to the store is going to happen right after Thanksgiving!) I made crab cakes for Brady and I, but I wanted something else too.

I decided on leftover Gimme Lean Sausage with veggies and egg whites. I was planning on putting in a Flat Out wrap with some lettuce and cheese. Sounds good right?! Here is how it turned out:

It looks good, but it just did not do it for me. I ended up throwing it all away and eating cereal for dinner. Sometimes you just have to do that!

🙂 New recipes tomorrow! Plus a holiday contest!!

  • 1 box of chocolate cake mix
  • 1 can pumpkin
  • 1c. chocolate chips

Mix all together and bake as directed. Enjoy in every way possible!
