Heath Carmel Apple Dip

Warning: This is not very healthy but it is highly addictive and delicious!

Heath Carmel Apple Dip

  • 1 block of reduced fat cream cheese (1/3 less fat)
  • 1/2 c. brown sugar
  • 1/2 c. white sugar
  • vanilla – splash
  • Heath bar pieces

Mix cream cheese with sugar and vanilla. Stir Heath bar pieces with a spoon. Serve with tart Granny Smith apples or any apple of choice!

Packed lunches, that is!! We are in the final stretch of the year – tomorrow + 4 days next week + 1.5 days the following week and it’s SUMMER VACATION!!

We had a crazy busy week, again! Last night I had book club here, Mexican theme! And tonight I went to Brady’s soccer game(it went well, they won by a ton) and then helped a neighbor make a diaper cake.

People at school often ask me how I have the time to make such healthy lunches and I think it’s pretty easy as long as you have planned ahead.

This week’s lunches were leftovers like usual but I thought I would show how easy it is to take healthy leftovers. It’s great if you take the time to make a healthy dinner. We always try to get at least 1 dinner and 2 lunches out of a meal, and sometimes we get more!!

This is leftover cucumber/tomato salad with added jicama rice (jicama zapped in the food processor):

To get some carbs and protein I added a Flat Out wrap filled with Naturally More PB and banana slices: I had to sample it 0 hence the bite

Since I eat breakfast around 7:30-8ish and lunch at 11:15, I am STARVING by 2:30 – 3ish. Luckily my kids had special at 2:40 each day this year, so I was able to eat a snack then. Usually I would have a piece of fruit with something else to fill me up but not make me stuffed before dinner.

Many times this year I made this “breakfast cookie” dip for my fruit.

Breakfast Cookie Dip

  • 1 smashed banana
  • 1 tbs. pb or ab or nautrally more
  • splash of chocolate soy milk light
  • 2 scoops choc. protein powder
  • 1/3 c. of rolled oats

Mix all together and store in the fridge until ready to eat!

Soooo good and just the right amount of full.

Fruit Dip to Die For

1 pack of sugar free vanilla pudding mix

1 tub of fat free cool whip

1 container reduced sour cream – or fat free if you would like!

Mix and enjoy!

This year we are having a New Years Eve Party at my parents house in Cleveland! It will be about 20 people, family and friends. We are planning a competition night with games

Buffalo Chicken Dip (GF) with celery and crackers

Shrimp – in chili sauce with celery (GF)

9 – layer dip with blue tortilla chips (GF)

BBQ shredded chicken (GF) plus mini rolls (not GF)

Meatballs (GF)

Sushi (GF)

Salad (GF)

Corned Beef (GF) with mini rolls (not GF)

Dehydrated Treats – hehe!

Any other ideas! I will post drink menu, competitions and dessert plans!!

Easy Holiday Dips

Creamy Coconut Cream Cheese Dip

  • 8 oz. cream cheese (fat free doesn’t work because it gets watery)
  • 4 c. powdered sugar
  • 1 tsp. vanilla
  • flake coconut

Mix cream cheese, powdered sugar, vanilla and 1/2 c. coconut. Form a ball with the cheese and plate it (if you don’t have a cute plate you can make 3 balls to form a snowman) Serve with graham cracker sticks or cookie sticks or apples!

Healthy Refried Bean Dip

  • 1 can refried beans (I used fat free beans)
  • 1/3 c. ff sour cream
  • cumin
  • salt and pepper
  • mexican seasonings
  • lime juice

Mix all together and serve with veggies or tortilla chips!
