I still have lots of fun cookie pictures to post from our cookie baking party yesterday! I will get those up!

Tonight Katie and Kurt came over for dinner. Katie is recovering from ACL surgery is hobbling around with a huge brace and crutches. She is doing pretty well – minus the stairs 🙂 Katie and Kurt are both big athletes – Kurt is the head football coach at a highschool and Katie is a volleyball coach. Kurt had ACL surgery last summer so they should be both be as good as new by summer!

Brady requested spaghetti and meatballs for dinner, so that is what we had! I also made green bean casserole(the first time I made it since Thanksgiving, I sort of threatened Kurt’s life not to finish it so I could take leftover for lunch tomorrow), salad and fresh bread.

I even broke out the Christmas napkins –


We made the meatballs homemade too! The recipe was super simple:

Homemade Meatballs

  • 1 1/2 lbs. Laura’s Lean Ground Beef
  • 2 eggs
  • 1/2 -2/3 c. Italian bread crumbs
  • salt and pepper
  • Italian seasonings
  • garlic poweder
  1. Mix all ingredients together and form small balls.
  2. Bake at 375 for about 20-25 minutes.
  3. Toss the warm balls into sauce and serve over hot pasta!




I had pasta sauce without meat over veggies, bread, and green bean casserole …plus TONS of Christmas cookies for dessert!

This year we are having a New Years Eve Party at my parents house in Cleveland! It will be about 20 people, family and friends. We are planning a competition night with games

Buffalo Chicken Dip (GF) with celery and crackers

Shrimp – in chili sauce with celery (GF)

9 – layer dip with blue tortilla chips (GF)

BBQ shredded chicken (GF) plus mini rolls (not GF)

Meatballs (GF)

Sushi (GF)

Salad (GF)

Corned Beef (GF) with mini rolls (not GF)

Dehydrated Treats – hehe!

Any other ideas! I will post drink menu, competitions and dessert plans!!

Dinner tonight was amazing!  We made two Italian meals of similar things.  Mine consisted of:

Semi-Homemade Veggie Loaded Tomato Sauce:

  • 1/2 jar of organic Italian Herb Sauce
  • 1c.mushrooms
  • 1/2 c. broccoli
  • leftover grilled zucchini and onions from Sunday dinner
  • 4 fresh basil leaves chopped up
  • 1 tbsp. minced garlic
  • 1 tsp.Italian seasonin
  • salt and pepper

In the process of cooking

I added this veggie/tomato mixture to 1/2 a spaghetti squash and added parm!

For Brady I made homemade meatballs with Barilla Pasta Plus we also “modified” his sauce.

Homemade Lean Beef Meatballs

  • 1 – 1 1/2 c. Laura’s Lean Beef
  • 1/2 c. Italian seasoning bread crumbs
  • 1/4 c. parm.
  • salt /pepper
  • 1 T Italian Seasonings
  • 1 egg
  • 3 fresh basil leaves (chopped fine)

Bake at 400* for 15-20 min. or until meat is browned through the center.

For B’s sauce I added black olives, parm and of course the balls!  🙂

We enjoyed our spaghetti quickly because we had to run out the door for tennis.  I love it and I can see how people can get addicted to this sport.  When we got home, I wasn’t really hungry at all but I felt the need to have a bowl of Cinnamon Toast Crunch, seriously the best cereal ever made!  It was a great dessert!
