Panini Make Saves the Day

This week was packed with things each night! From Christmas parties to soccer games to dinner guests, we have had a busy week.

I left the panini maker on the counter all week because I knew it would get put to good use. I made paninis for dinner and breakfasts. Here are two of my favorite combos from the week:

  • Multigrain bread
  • hummus
  • spinach
  • artichokes
  • brie
  • leftover veggies
  • spicy mustard

And a breakfast sandwich of :

  • strawberries
  • banana
  • TJ’s natural PB
  • multigrain bread

So warm and gooey! This is a great way to start the morning – good protein, carbs and fat plus the sweetness of the fruit.

After school and a meeting and some outdoor exercise time in the sun (cold sun, but sun) I was ready for a hot and easy dinner. I sampled some black bean soup at Trader Joe’s this weekend and since I liked it, I bought the simple ingredients. I love how they give samples because I usually end up loving what they offer and buying it!

Here were the ingredients for the soup. This is it.

  1. Low Fat Black Bean Soup
  2. Corn and Chili Relish – tomatoless salsa
  3. Black Beans – Cuban Style

We paired it with these delicious paninis:

Mine included:

  • two pieces of 100% whole wheat Nature Pride bread
  • laughing cow light cheese
  • spinach
  • hot pepper relish
  • Brady’s guac

I am going to head to bed early and then hopefully wake up to go to spinning at 6am! We will see if that happens. 🙂

Panini Party

Tonight, after school and a 45 minute elliptical workout, we started the panini making process. We pulled all possible ingredients out of our fridge and set them on the counter. Then we proceeded to go crazy making delicious sandwiches!

This was a his and hers type meal.

Hers:

  • Ezekiel Bread – 7 grain
  • spray butter for the sides
  • avocado
  • tomato
  • arugula
  • zucchini
  • fat free swiss cheese
  • hot pepper relish
  • spinach
  • spicy mustard
  • tiny dab of miracle whip
  • salt and pepper
  • basil leaves

His:

  • fresh French bread
  • deli turkey
  • tomato
  • fat free swiss
  • pepperoni
  • hot pepper relish
  • basil
  • mustard
  • mayo
  • avocado

If you don’t ever make paninis- start now! We could eat them every night. I am already planning a possible breakfast panini which is why I left the press on the counter!!

Quick Dinner

I was not in the mood to run today, despite both of my efforts to go. My legs felt like 234983498 pounds each, so I didn’t work out. Instead, I made us paninis for dinner.

Mine was a combo of

  • fresh basil pest (homemade and oil free)
  • fat free feta
  • pear
  • tomato
  • sprouted wheat bread

Bradys included:

  • chicken
  • pear
  • guac
  • cheddar
  • tomatoes
  • whole wheat bread

Both were amazing as usual! I could eat these everyday!!

SOOOOOOOOOO happy it’s Friday! 5 more days of school until Spring Break!

This weekend was full of painting and paninis! Yesterday, we woke up and got started on the painting we had planned to do.

  1. The first job was the hallway going up our stairs and into the upstairs that we had patched and just needed to repaint the whole thing – same color as before.
  2. The second job was our guest bedroom. It was two colored blue and cream room – not horrible, but not my style. This took a lot work and a lot of KILZ! That blue was deep!!

When we needed a break yesterday, paninis were the first thing we thought of!

YUM! They gave us just the energy we needed to finish the jobs (and run 6 miles!).

Then it was off to dinner with good friends and the best food! My dinner was a hummus sandwich with tons of veggies!

This morning, we woke up and spotted the panini maker sitting on the counter from last.  We immediately wanted another panini, so that’s what we made for breakfast!

Last night for Brady’s birthday we had people over! A few people came for dinner but most just came to celebrate after dinner! We had a great time playing WII and Partini while managing to consume a LOT of beer and wine!

I wanted to make something easy and fun for dinner since people were coming over right after. Paninis seemed like the perfect thing because Brady loves sandwiches!

We had an assortment of choices:

  • grilled chicken we cut into strips
  • bacon
  • smoked turkey
  • Colby-jack cheese
  • spinach
  • tomatoes
  • pickles
  • avocado
  • apple
  • black bean spread (just pureed black beans with red pepper flakes)
  • roasted red pepper spread ( pureed roasted red peppers)
  • mustard
  • mayo

And some DELICIOUS roasted veggies (zuc, squash, and potatoes) that Brady made and I somehow missed. 😦
