It’s been another busy week! I can’t believe my summer is half way over – I know I shouldn’t complain, but I am not ready to go back to school yet! 🙂 A lot has been going on and I have been a bad blogger but I will have a week of recipes coming up!

I am making this “try a new recipe” week! I thought it would be a good week to do this because Brady and I will be home all week. I will be writing o328403984 million papers for grad school and he will be studying for a test to get an extra certification for work. We will both be done on July 31st!

So anyways, last week when I went to visit my mom for the night while my dad was out of town we made these…

Portobello Burger with Artichokes and Zucchini

Balsamic Bello Burger

  • Good Seasons Italian dressing packet mixed with balsamic vinegar instead of reg.
  • portobello mushroom
  1. Marinate the mushroom in the dressing
  2. Grill the mushroom until cooked how you like it

A/ Z Veggie Mix

  • artichoke hearts
  • onions – sliced
  • zucchini
  • garlic wine seasoning from The Melting Pot
  1. Slice onions and zucchini
  2. Open or thaw artichoke hearts – not in oil
  3. Spray a frying pan with cooking spray
  4. Place onions, zucchini and artichoke in pan.
  5. Cover with garlic wine seasoning.
  6. When veggies begin to cook and stick to the pan, add water and keep cooking until they have reached desired doneness!
  7. Serve with the burger or on the side, on a bed of mixed greens

Cucumber Sandwiches


Cucumber Sandwiches

  • sliced cucumber
  • small party bread – we used rye and pump.
  • 1 block fat free cream cheese
  • 1 block reduced fat cream cheese
  • 1 packet of ranch seasoning mix
  • salt and pepper

Slice cucumbers into thin slices. Mix both blocks of cream cheese with ranch packet until seasoned completely. Spread cream cheese mixture onto bread and cover with cucumber.

Olive Tampenade Pinwheels

  • 1 can of black olives
  • 1 jar of green olives
  • 1/2 c. walnuts
  • 1 block of cream cheese
  • salt and pepper
  • 1 pack of white tortillas

Blend all of the above and cover together and cover tortillas with the mixture. Roll up the tortillas and chill. Cut into small pieces.

Super Summer Saturday

Sorry for the missing posts over the past few days.  My life is back to a routine now, so I will be back – starting now!  We have had our best friends from college in town, so we have been running around like crazy!  It has been great and I don’t want them to leave. Tonight we have a big party to go to so I will post a few pics, tomorrow!

Onto lunch!  After running and going to the farmers market, Hallie and I went to Costco for produce and then the mall.  We did some damage, both finding new outfits for the party tonight! We were starving when we got home because our TJ Fiber Twigs with blueberries were no longer holding us over.

I thought we had hummus and had planned on making veggies sandwiches, but we didn’t so….I had to whip some up!

In the food processor I mixed:

  • 1/2 can garbanzo beans
  • 1/2 can chick peas
  • 3 jarred roasted red peppers
  • 5 fresh basil leaves
  • salt/pepper

Blend until smooth!

Half-way mixed

Spread on my veggie sandwich.


We also had a spinach-berry-goat cheese and almond salad.  So delicious!

Now we off to get ready for our party!  Tomorrow we are having a cookout so get excited for a fun menu with new recipes!  Have a great weekend! 🙂

So Super Hungry

Today did not go as planned.  It was good, and busy and I accomplished a lot, but it was not the way I was thinking it was going to be.  I was hoping to have a nice relaxing last day of summer before school starts tomorrow, but what was I thinking?  I had a ton of things to do – all of which took time!  After breakfast, I left home thinking I would be back in PLENTY of time for lunch around noon.  At 3:00pm, when I finally got home, I was starving! I feel more settled than I did this morning, so hopefully my week will go a little smoother now that I am prepared!

When I did get home, I could barely wait to eat but wanted something fresh.  I decided on a turkey sandwich because it was quick, filling and “clean”.  It included everything I could find:

  • shaved smoked turkey
  • 2 slices of sprouted wheat bread
  • tomato
  • avacado
  • hummus
  • lettuce
  • cucumber
  • mustard

It was huge and I ate it about 3 minutes.

I told you it was big!  It might have filled me up if I would have slowed down a little bit, but I was still hungry so I made another slice of toast and topped it with 2 Tbsp. albacore tuna with hummus and veggies.  The tuna was left from Brady’s lunch so it was ready in the fridge.

And while I was busy chowing down, I was cooking some famous kale chips as a side.  I shredded the kale from the stalk, sprayed with a little olive oil cooking spray, tossed on some parm and threw them in the oven to crisp.

It was only after eating these and drinking at about 40oz. of water was I satisfied and full!  That was a good  lesson in remembering to pack emergency snacks!

I had a great and  healthy start to my day.  I decided to try making oatmeal with egg whites, like many people have been lately!  🙂  At first I was not sure that I liked it.  The flavor was different and the texture was too.  I kept thinking it should be sweet, but as I ate it more, I really enjoyed it!

I mixed:

– 1/2 oats

– water

– 2 egg whites

– 1/2 laughing cow light

– salt and pepper

– immitation bacon bits (not really my thing, I should have skipped these)

I microwaved it for two minutes.  I think next time I would add veggies because they are more thing and they would have given a litle crunch/chew.   I will let you know how that goes.

I went to school to finish getting things ready and set up and my mom met me there to help.  When we left, around 1pm, we were starving!  I decided since it is leftover week, I should keep it going!

We had leftover gazpacho with added avocado and tomato.  I also added some Mexican spice which made it significantly better than last night!  With that, we had a turkey sandwich on sprouted bread with hummus, mustard, cuc, tomato and arugula.

For dinner, we went to Rusty Bucket because they sponsor Brady’s soccer team and he had a game tonight.  I had a ceasear salad and I shared a grilled chicken wrap with my mom.  I ate all of my semi-healthy dinner, then moved on to the fries!  Whops!  Sometimes you have to do that though…right?!  I also tried a fried pickle – not bad, but not worth it.  Then on the way home from dinner we stopped at the store to get wine for tomorrow night, and I decided I needed some Fro-Yo.  I got a container of Bryers Light Cookies and Cream.  Let’s just say, I quickly remembered why I never buy ice cream, because I LOVE it!

Tomorrow I will have a better post.  We will be packing for a weekend at the lake and I will let you know what kind of things I am packing to travel with!

This morning we woke up and watched the Olympics for a little to get motivated for our run. Around 10am, we headed out into the 68* sunshine. I was thinking we would just do 2-3 easy miles and then head back for breakfast. We started running and just didn’t think to turn around until we were a good 3 miles from home. It was fine because we felt great and it was soo nice out. I love when you go farther than planned – it’s like a bonus!

So after our 6 mile run, we were hungry and thirsty. Luckily, I had had about 1/4 of a protein bar before we left so my stomach wasn’t totally empty. We decided to just have lunch instead of a really late breakfast. I made 2 turkey sandwiches on wheat with:

– hummus

– cucumber

– tomato

– arugula

– lettuce

– bacon (for Brady)

– light mayo and mustard

I also made us each a red, white and blue yogurt parfait! These included: 0% Greek yogurt, blueberries, wheat berries, strawberries and homemade granola. I needed a little breakfasty food to go with our sandwich.

It all hit the spot, but I think a snack will be in order this afternoon before we have a cookout tonight. A major downside of having people over all the time is DISHES! I am thinking paper plates tonight, I know its not great for the earth, but either is running the dishwasher 874058720348 times in one weekend! 🙂

The Mile High

When I was getting my hair done today, around noon, I all of a sudden became starving!  I’m not sure why, but when I got home I wanted to make something quick and easy.  I don’t know if I have been craving breadish carbs, or thought of it because last nights dinner and this mornings breakfast, but I decided to make a sandwich!

I toasted 2 pieces of TJ sprouted wheat bread (deja vu:) and then added:

– a hummus smear on both pieces of bread

– a little leftover chopped, grilled chicken from last night

– raw zuc and yellow squash

– arugula

– tomato

Look at how big it was!  I was planning on wanting more than just a sandwich for lunch, but I was really full after all of this fiber!  I did have a dish of frozen blueberries and 3 cherries for sweetness!

Around 3ish, I had a peach with some PB on it. Sorry no pic.  I also had about 12 of these little guys!
